Burst Cherry Tomato Pasta

INGREDIENTS

2 12 oz MightyVine® Cherry Tomatoes

6 garlic cloves, minced

4 sprigs basil, divided

12 oz pasta of choice, cooked al dente

½ cup finely grated Parmigiano, divided

½ cup extra-virgin olive oil, divided

1 ½ tsp salt, divided
-
¾ tsp crushed red pepper flakes
Directions
Step 1
Heat oil in large pot over low heat. Add in garlic and cook for 2 minutes.
Step 2
Increase heat to medium and add the tomatoes, red pepper flakes, 2 sprigs of basil, and salt. Stir to coat, until tomatoes begin to burst, about 4 minutes.
Step 3
Smash about half the tomatoes to help thicken the sauce and cook for 10 minutes more. Remove the basil sprigs.
Step 4
Add noodles to sauce. Cook over medium heat for 2 minutes, making sure noodles are coated.
Step 5
Remove from heat and stir in 1/3 cup cheese.
Step 6
Serve pasta among bowls, top with remaining Parmigiano and basil leaves, removing from the sprigs.
